Our Story

A local shop with heart

We opened our doors in November 2020 and have proudly been serving Bollington and its visitors with a carefully curated selection of fine wines, artisan cheeses, and delicatessen delights ever since.

Open seven days a week, we're here to help you elevate any dining experience — whether you're searching for the perfect bottle, a standout cheese, or all the little accompaniments that make a meal special.

Meet the Team

The people behind Knowles Green

Dagmara

An established artisan cheesemaker in Wales and a WSET Wine Diploma graduate, she has worked alongside celebrated chefs including Michael Caines and Michel Roux.

Bringing deep expertise and passion, she co-founded Knowles Green to share exceptional food and wine with the community.

Mark

A Canadian Sommelier Diploma graduate, Mark has judged at the International Wine Challenge in London.

With a love of wine, nature and community, he brings a thoughtful and welcoming approach to the shop.

In November 2020, Dagmara and Mark opened Knowles Green to share their passion and experience in both food and wine with the local community.

Driven by a love of quality ingredients and great conversation, they created a space where people can discover new favourites and enjoy simple pleasures done well.
